Let's base it on 2 people sharing, could be a couple or 2 friends.
FOR EXAMPLE,
THESE ARE ESTIMATES BASED ON PAST EXPERIENCE AND SEARCHING FOR HOLIDAYS
Flights - Return low cost Easy Jet or Monarch flights
£150 EACH PERSON ONE WAY (including check in and 1 hold bag)
That's £300 return x 2 = £600
Hotel/Apartment/Self-Catering
To include half to full board (2 or 3 meals included in the price a day)
Hotel £400 a week + £100 for extra person meals
Going Out/Taxis/Touristic Attractions
based on £100 for taxis, £100 tourist events, drinks, snacks, lunch, tea), £150 dinners, £150 nightlife (dinner, bars, clubs) £500 a week for activities
£1000 for shopping,

And keep 200 euros each cash spare
FOR 2 WEEKS
The whole holiday would cost approximately £3500 for 2 people sharing at a hotel or in self catering accommodation but with half or full board included and flights.

YOU SAVE AROUND £1000
For a 2 week holiday it will only cost £2180 and add 200 euros each spending money
And if the flights and hotel are bought together as a package you could get a deal as low as £600 for 2 weeks at a hotel, full board, and including flights, saving another £500. And activities and going out costs can be reduced again down to £350 in total and shopping down to £300. Saving £1150 (£2500-1150)
TOTAL £1350
For a 2 week holiday it will cost over £1000 for 2 people sharing. And this is without really spending a lot of money and just doing a bit of shopping.
